Nick's Rum

This recipe will deliver a very smooth and fruity flavoured rum, much the same as another popular rum, but without the harsh after taste. After following the recipe below try and leave it alone for at least 2 weeks, tastes damn good and even tastes very good with diet coke. After some 4 months of ageing in the bottle, this stuff tastes that good that Bundy rum takes a back step or two....... Enjoy, I'm sure you will. The formula follows:

I will presume that you have some nice clean alcohol at close to 80%. Well carbon treated and filtered clean.

  1. To 4 litres of 80% add 4 tablespoons of virgin oak chips.
    (one tablespoon per litre)
  2. To this also add 1 heaped teaspoon of powdered Allspice.
    (1 teaspoon to 4 litres 80% )
  3. Leave this mix in a cool place for 3 days...... ASOLUTE maximum of 4 days.
  4. After this time, filter the alcohol to remove the oak and Allspice. You should now have 80% alcohol with a slightly fruity spice smell and slightly coloured by the ingredients we have used.
  5. Now dilute to a strength of 40% with spring water (bottled variety) any brand.
  6. Now the following ingredients are added PER LITRE of 40%
    4 mls per litre of Ageing syrup.
    9 mls per litre of Squires Rocky Rum
    0.5 mls per litre of Qld Dark Rum
    0.5 mls per litre of Premium Rum.

All of the above ingredients and flavourings are measured with great accuracy. Try and obtain a syringe with suitable gradings to measure the small quantities.

If followed correctly you will have a decent rum in a couple of weeks.


PORT

  • 4 Litres of 100% Grape Juice
  • l Kg Brown Sugar (Not Dark)
  • 1 Teaspoon Yeast
  • 1 Teaspoon Wine Nutrient

Put into 5 litre bottle. Rack off after 10 days. Then rack off again after 24 days. Top up bottle with juice. Rack off after 3 more weeks. Rack off into 2 litre juice bottles. Let stand for 2 months. Bottle in wine bottles.


VODKA CRUISERS

Made with RTD'S

Add 1 bottle of RTD concentrate to 1250ml of Spirit (Vodka). Then add 30 ml to a 200 ml glass with ice, top up with your choice of Soda water, Sprite or Lemonade. Those people with a sweet tooth usually prefer lemonade, but those that prefer little sweetness use Soda water. Sprite gives a nice in-between balance. Adjust amount of RTD flavour to individual taste.

An alternate method of enjoying these concentrates is to simply add 5ml of concentrate to a 200ml glass, add 25ml of spirit, top up with your choice of Soda Water, Sprite or Lemonade. For a stronger flavour, just add more concentrate!

Flavours available: Blueberry, Coffe & Cola, Orange, Lemon, Melon, Spiced Fruit, Wildberry, Tropical, Cherry, Passionfruit, Raspberry, Pineapple, Cranberry, Mango & Passionfruit, Ginger Ale, Ginger Beer, Strawberry & Lemon, Lime & Bitters.

LEMON CRUISERS

  • 3OmI Lemon Vodka (Prestige)
  • 15ml Citrus Vodka
  • Lemonade or Solo or Lift
  • To Your Own Taste

PINEAPPLE CRUISERS

  • 4OmI Vodka
  • 2OmI Pineapple Crush Cordial (Golden Circle)
  • Pineapple Crush Softdrink

 


Cocktail Flavours:


Bloody Mary:

The famous breakfast pick-me-up. Cloud 9 Bloody Mary mix contains Tabasco sauce and Worcester sauce plus extra tomato to give that genuine bite of a real Bloody Mary.

  • Place 200ml of vodka and 300ml of tomato juice in a cocktail shaker.
  • Add two teaspoons of Cloud 9 Bloody Mary mix.
  • Shake and serve over ice.

This alcohol free cocktail mix will spice up any tomato juice into a tasty healthy drink.

Margarita:

That famous tequila, lime and salt blend with a hint of Triple Sec.

  • Place 200 ml of tequila and three cups of ice in a blender.
  • Add two teaspoons of Cloud 9 Margarita mix and blend for 30 seconds.
  • Serve in cold, salt-rimmed glasses with a twist of lime. Serves 4.

RUM ROYALE LIQUEUR

  • 750mI Premium Rum
  • 400mI Liqueur Thickener
  • 40mI Chocolate Cream Essence
  • 40mI Coffee Essence

    Mix Together. Let Stand for at least 1 week.
    Only Spirit Unlimited Essence used in this recipe.

RUM

  • 6ml Queensland Style Rum
  • 6ml Rum Jamaican
  • Oak Alcohol 2-3 days only.
  • Strain off oak.
  • Add essence.
  • Leave stand.
  • Makes 1 litre.
  • 3OmI Queensland Dark Rum (Gold Medal)
  • 15ml White Rum
  • 5ml Dark Rum
  • Add to 4.5 litres of Vodka

CLOUD 9 COFFEE ADDITIVES

Add 5ml (1 Teas) to your cup of coffee

  • Italiano Supreme
  • Rum Cafe
  • Brandy Cream
  • Zambucca Supreme
  • Cafe Mocha
  • Highland cream
  • Irish Cream
  • Southern Royale

Cocktail Flavours:

Dacquiri: - Banana, Strawberry, Peach, Tropical & Melon

  • Place 100ml of white rum, two cups of crushed ice and sliced fruit in a blender.
  • Add two teaspoons of Dacquiri mix and blend for 30 seconds.
  • Pour into chilled glasses and decorate with Fruit and flowers. Serves 4.

Pina Colada

White Rum with coconut cream and a little pineapple.

  • Place 200ml of white rum and 200 ml of full cream milk in a blender.
  • Add two teaspoons of Cloud 9 Pino Colada mix and blend at high speed for 30 seconds.
  • Serve in ice filled glasses. Serves 4.
